Two Very Different Immune Responses

Food allergies and food sensitivities are both adverse reactions to food — but they involve distinct immune mechanisms and produce very different clinical pictures. Misidentifying your condition leads to years of ineffective dietary changes, ongoing symptoms, and missed diagnoses. As a nurse practitioner, I see this pattern frequently — patients who've been told they 'might have a sensitivity' when they actually have a true allergy, and vice versa.

What Is a True Food Allergy?

A true food allergy is an IgE-mediated immune response. Your immune system produces IgE antibodies against a specific food protein. When you encounter that food again, those antibodies trigger rapid histamine release — producing symptoms within minutes to two hours. These can range from hives and itching to throat swelling, difficulty breathing, and anaphylaxis. The most common food allergens include peanuts, tree nuts, shellfish, fish, milk, eggs, wheat, and soy. True food allergies require strict avoidance and often an epinephrine auto-injector for emergencies.

What Is a Food Sensitivity?

Food sensitivity involves a different immune pathway — typically IgG antibodies or non-immune mechanisms. Unlike allergies, sensitivities do not cause anaphylaxis. They produce delayed symptoms appearing anywhere from hours to several days after consumption. Common symptoms include bloating and digestive distress, chronic fatigue, brain fog, joint pain, skin conditions including eczema and acne, headaches, and generalized inflammation. The delayed nature of these reactions is what makes food sensitivities so difficult to identify without testing — patients rarely connect their symptoms to something they ate two days earlier.

Testing Options at Elevate

At Elevate Health and Wellness, Kristy Beard, MSN, APRN, FNP-C offers IgE allergy panel testing for true allergic responses, as well as comprehensive IgG food sensitivity panels that evaluate reactions to hundreds of foods simultaneously. Our most comprehensive panel tests 370 different foods and substances — giving you a detailed, actionable map of what your immune system is reacting to, so we can build a targeted elimination and reintroduction plan.
